Here is the recipe that I am using this year for Hedgerow syrup.

We use it as a vitamin boost when ill in hot drinks, on porridge, in yoghurt in fact there are lots of ways to use it.

Ingredients:

  • rosehips
  • blackberries
  • elderberries
  • 1 clove
  • honey

Now some people may find this a bit eek, BUT use them in the proportions you gather them!

Method:

I tend to gather enough for a medium pan, wash and destem and remove any wildlife hangers on, chop the rosehips at least in half. Put them all in a pan and cover with water and pop on the stove.

Bring gently to the boil, at this point I will give the contents of the pan a mash with a potato masher and then allow to simmer for around 10 minutes.

Strain the liquid into another pan or measuring jug through a sieve and discard the pulp.

Measure the amount of liquid and add 1 dessert spoon of honey per 100mls of liquid. warm through again to allow the honey to dissolve, bottle in sterilised bottles and allow to cool before storing it in the fridge.
